First time for these.  Prepped on Saturday and egged for the game yesterday.

Smoked 2 different sausages -  Chorizo and a Buffalo/Blue from Fresh Market.

Cut in ~ 1/2 inch discs.  Wrapped in Bacon.

Filled with Cream and Cheddar cheese mixed with Hatch Green and Jalapeno chilies.

Sprinkeled with Rendevous rub and brown sugar.

Egged for ~ 90 minutes at 275.

Made 60 and they were gone within an hour.  Adults and kids were devouring them.

If you have not tried them yet, you are missing out.

    Nice.

I had the same experience when I made moink balls for a derby party.  Arrived, put them out on the table and they were gone in minutes.  It was a nice feeling though sitting back and hearing everybody rave about them and enjoy them so much.  There was real disappointment when they were gone.  Guess I'm gonna need to double or triple the batch for the next party.
