Brisket cooking too fast
I have a 3lb brisket (yes, I know, it is too small) and I have had it on at 225 for 1.5 hours and it is almost at 160 degrees. What should I do, it appears it will be time to warp it only 2 hours of total cooking.

Hope for a good stall. When it's done pull it off, wrap it in heavy duty aluminum foil , warm towels, and put it in a cooler for up to four hours . You should be good!!Large BGE and Medium BGE

You're good. It's about to slow down when it hits the stall. Like marvel mentions, FTC and hold when it's done.Just a hack that makes some $hitty BBQ....
