JerseyMatt,[p]I would doubt sincerely that a 6 lb will take anywhere NEAR 18 hours. I've had a few go 1-1/2 hrs/lb to reach 190 internal, but lately most of them have been getting there in 1 hr with temp of about 225.[p]Do you have it on some kind of rack in that pan or is it sitting right in the juice? You don't want to boil the thing..I don't think![p]mShark
