    What time can I expect you in Evansville? May as well bring a pallet of ROCKWOOD while you are at it.
    No room on the truck with all that paella!!

    Many have touched on this - size matters!!  I would go small to start with.  14" or so is good - otherwise you end up needing to make more than 2 people can comfortably consume.  Read:$$$!!

  • I have the same pan as Little Steven.  In my opinion, you can never make too much paella.  I find it tastes even better the second time around.

    Re TJ Max for pans, I have seen them there and at Marshall's, you just can't predict what you will find there.  If they have one, the price is good.  Amazon always has them if you need it "now".

    You need to move to the Midwest buddy......nice people here.  Come on over for some BBQ, cookies, shooting in the backyard, topped off with some moonshine from my other neighbor!

    @jonessteave - no help with your query unless @SciAggie would loan you his.  The shipping would be substantial however.

    This thread hits home as I bought that Typhoon carbon steel 15.5" pan based on LS's recommendation.  It is a great paella cooker.  Every time I break it out I thank LS.

    You can throw anything you want in the mix. Any off seafood you prefer.  The star of the cook is the rice/socarrat and it doesn't care what you bring to the cook.  Give this link a look for a great primer:
