I'm doing Sea Scallops wrapped in prosicutto. I take it the temp is anywhere from 350 to 400. Do ya'll use a raised grid direct or what?[p]I'm gonna use Guava wood.[p]Thanks in advance.[p]Beers,[p]Ed

GrillMeister,
I go direct no raised grid. I've never used any wood. Get back to us with flavor.[p]Mike

Car Wash Mike,[p]Thanks. I'm tossing on a small piece of Guava. I'll let ya'll know.[p]Ed

GrillMeister,[p]Haven't tried my guava on scallops yet but I like it on salmon, steelhead and shrimp.[p]I agree with CWM on the raised grid, I add a layer of foil on the lower grate to avoid any flare ups, and I cook at 375° Are you planning on a little marinade in white wine before grilling?[p]~thirdeye~

thirdeye,[p]I've marinated in a little white wine, soy sauce & honey. Was that you the recommended that way a way back?

Ed, be sure to post pics and results. I've been wanting to try bacon wrapped scallops on the Egg - this could be my inspiration :-)[p]Lovin' that guava too,[p]TRex

GrillMeister,[p]It could have been as I use a variety of marinades (10 minutes max) for scallops, (I use either wine, sake, clam juice, seafood stock, lemon juice etc. for a base) and sometimes I add either tamari, peanut oil, brown sugar, honey. [p]I like them to stay moist and plump during the cook.[p]~thirdeye~

TRex,[p]Whoops, they went to fast. The guava was very subtle.[p]These were Costco Sea Scallops. Tasty, but I'll season them a little better next time. Perhaps a little butter & garlic.[p]We will do it again.[p]Cheers,[p]GM

I melt butter and Raging River and brush on just before serving.[p]Mike

Car Wash Mike,[p]That's what was missing.

Car Wash Mike,[p]Yummm. Will head to HEB tomorrow to see if they have any.[p]Cheers,[p]TRex
