Pesto and mozzarella stuffed chicken wrapped in bacon

Tonight was a great dinner! I started off scrolling through the forum having an idea I wanted to do stuffed chicken. I found a few different ones that caught the eye. I decided to go with the pesto and mozzarella stuffed chicken wrapped in center cut bacon. I first placed the organic boneless skinless chicken on a cutting board and put Saran Wrap over it to pound it thin. I then put some traditional basil pesto on the chicken accompanied by some fresh mozzarella. I then wrapped the chicken up with center cut bacon and placed on the egg. I cooked at 300-350 direct. I will probably pull the chicken off a little earlier next time but it still turned out good. I served the chicken over brown rice with sweet and spicy fresh asparagus. When I had everything plated I poured the sweet and spicy juice from the asapargus over the dish. Added a ton more life to the brown rice. Look forward to doing this again for some friends.
