So... had great results last weekend, cooking three racks of baby-backs... However, I plan to kick it up a notch this weekend.  Just got my adjustable rig, and extender with an extra oval grate.

Here's my plan... for cooking 6 racks.... level by level..

Oval Rack 2 Three Racks of Ribs
Oval Rack 1 Three Racks of Ribs
Water-Filled Drip Pan (Sitting On The Stone)
Bottom of Adjustable Rig = Oval Stone

I didn't have the adjustable rig last weekend, so I just placed the three racks bone-side-down on the rack.  They overlapped a bit, didn't seem to be a problem.   I know that some will say that I don't need the drip pan of water... but the results were so good and moist.. I'm reluctant to leave it off.

I'll probably swap the racks (move the top to the bottom) every hour or so...  Last week I did a 3 - 2 - .75 with the dome temp steady at 240....

Anyone see any issues with this plan?
