Quantity with Quality
I just did three racks of ribs on my LBGE this past Saturday. I had to let them overlap just a bit in order to fit them on the grate. However, I am hoping to double that amount for a gathering this coming weekend.
I just ordered the Large Adjustable Rig and I'm hoping that by using this I can double my capacity. Has anyone tried this?
Also, I generally use a drip pan of water for everything, including this past weekends ribs.. which turned out perfect. However, with the adjustable rig, and oval stone that is part of if.. I'm not sure if there will be room to fit a drip pan. What is the consensus on rips smoked over a pan of water versus no pan?

Don't think there is really a need for water pan, as the egg keeps everything extremely moist as is, but you'll still want something even if it is just a cookie sheet to collect the drippings.

before we had adjustable rigs we just stood them up in rib racks and some of us dared to cook them directfukahwee maineyou can lead a fish to water but you can not make him drink it

I personally like using a water pan. Not for moisture, but as a heat shield/diffuser. I find that drippings tend to burn when they hit a platesetter/clay saucer/ steel diffuser.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX.
