Grilled Mussels alla Piastra

Picked up mussels from Central Market and tried a new Mario Batali recipe.
In food processor combined 2oz prosciutto, 1 cup toasted bread crumbs, sliced scallions, and lemon thyme; pulsed to combine well.
Made the marinate: zest and juice of 3 lemons and 1 orange plus 1 thinly sliced jalapeño. Tossed with mussels.
Got BGE going and preheated cast iron griddle. Poured mussel mixture on griddle, added mixture from food processor, covered and cooked 2 minutes. Removed cover and cooked additional 2 minutes.
Removed and served with bread and wine. Fantastic! Great flavor, relatively healthy, very different from most other butter/wine/garlic methods.
