Fresh venison going on now. Rubbed with @mickey coffee rub. Injected with beef broth and Worcester sauce. 250 indirect until medium. Will post results later.

Looks good from here. In the days of old when I did hunt I only had any luck with the blackstrap.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now).

I have an antelope hind I want to something with. This looks good, but I might have to do jerky instead. Waiting on pictures.

Used 3 large hickory chunks. Took about 3 hours to reach 140. Very good flavor. The outside was a touch dry, the interior near the bone was perfect. Next time would pull it a little earlier.Austin, TX
