New Year Ham

I got a 11lbs Smithfield shank ham ready for tomorrow. I injected it with maple syrup, and got a bourbon maple rub on it and in the refrigerator for tomorrow's cook.
Will try 275 dome temp till 135* IT then FTC till family gathering in the evening. Will send more pics later.

Sounds like you have a great plan, enjoy and Happy New Year.I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

Yes to the 135. We want pics of the finished cook please.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

3 hours in 128* IT Also made pig shots first time, next time I will use wooden skewers instead of metal, try to move over on the grill and then little try to roll over and spill out some of the toppings. Live and learn!!!

3-1/2 hours temps between 133-138 FTC off to dinner in about 1 hour, I will let y'all know decision on the folks later
