I did 3 slabs of ribs the other day (whole) and they turned out fine except a couple of end pieces that got scorched. They were hanging beyond the plate setter, and though I'd put some folded in half HDAF on the plate setter, trying to extended the protection it provides, that apparently didn't work.
I used to cut the slabs in half and use a rib rack...but my rib rack is so heavily rusted now, I'm afraid to use it. I think it was chromed steel. Would a stainless rib rack really not rust?

A stainless or coated rack shouldn't rust if you clean it after every use. This is my current set up. I also use a larger pan on the PS to protect the edges.Dave - Austin, TX
