ToddB in Ottawa,[p]I like to keep pretty much all my recipes for meat simple, mainly because i don't plan ahead.[p]I've been eating quite a bit of venison, I just treat it like beef, just don't cook as long, i think it is because how lean the meat is. If you overcook it it will be pretty tough.[p]Ever made jerky? GOOOD Stuff, and since you have a perfect cut of meat, that is what i'ld do.[p]Scott

  • Thanks for the hints, Scott. I should have posted earlier as I was running out of time. [p]I currently have the Elk Rump Roast smoking in a crazy Honey-Garlic and Unibroue Trois-Pistoles (beer) concoction.[p]This should meld well with this afternoons beer-lover's gathering featuring barleywines... :)[p]Man, I love the egg! At each of the beer-gatherings I've hosted everyone comments on how great everything tastes.[p]All the best from Canada![p]Todd
