Thick cut Ribeye on the Mini

A couple of weeks ago I picked up a 3 bone ribeye roast and cut it into 3 thick steaks.  I cooked up the smallest of the 3 tonight (just 1 lb 7 oz but over 2" thick at its thickest section.

Indirect cook on the Mini at 250-275 until IT hit about 115:

Removed the steak and the Woo/drip pan and opened up the vents for a sear of 1 minute per side on the CI grid
