    • Ray Lampe, also known as Dr. BBQ, is a celebrated barbecue champion and cookbook author considered a leading expert in the art of barbecuing.
    He recommends that rookie barbecuers start off with small, inexpensive smokers like the Big Green Egg, a popular ceramic smoker and grill that starts at around $200. Dr. BBQ said that for the inexperienced, most offset smokers — where the fire is in a box separate from the cooking area — do not adequately control heat and can make food too smoky. "For that reason I'm not a big fan of offset-style cooking," Dr. BBQ said.[p]
