butchers twine and high heat ?

 Just wondering what effect searing is going to have on cotton butchers twine on a rib roast ?
Isn't it going to catch fire and burn ?

I have done some rib roasts around 400-425F to sear and the twine still works.  Usually if it is tight enough it gets lost in the meat.

Worst case, if you got real cotton twine, it's going to burn up.

Worst case, if you got "cotton" twine made in China that's actually polyester or some other synthetic, it's going to melt on your food.  When buying this stuff in the store, read the fine print.  I've seen stuff with big letters on the label Cotton Twine, and then in the fine print, it says that it could be cotton, nylon, or polyester.

You can usually find it at the grocery store. Aka kitchen twine.

You can get the real stuff at Williams Sonoma or a chef's supply. Probably the other kitchen box stores as well. Get the thick stuff if you can.
