I seal liquid with my food saver all the time. Just use the pulse button and you can start and stop the vac when you want. That how I do sous vide scrambled eggs.

I'm not sure but the whole chamber goes to way negative pressure. It takes longer than a normal sealer but it's set and forget so you can be filling the next bag while the other one is in process. I believe that once the chamber is repressurised the air is forced out of the bag. The liquid literally boils in the negative pressure. All of a sudden it evacuates the chamber and the bag flattens. It's really neat.

@Little Steven, which model did you get-the 115 or 120? The 112 is $595 on Amazon. Did you look at that one? If so, why did you go with the other? I like the smaller size of the 112, and don't see much difference in operation unless I'm missing something. Very sim in chamber size, bag size and weight. Same motor. I got the 115. They didn't have the 120. There are more adjustments on the 120 but I didn't see it. They both have the single hinge glass dome which is the difference between the 112 and the other two. The guy told me that they had a lot of problems with the double hinge on the 112. The 115 was listed at $899.00 Cdn.

I did read that the lid on the 112 has issues so I will likely get the 120. It's $799 at the site listed above. It also seems the 115/120 is actually slightly smaller than the 112, but 4 lbs heavier. Yes they will work. If you have the rolls you need to make up the bags with the foodsaver. You will still need the foodsaver for things like salmon fillets, skirt and flap steak.

The vacuum area is limited unless you are going to buy a $15,000 unit. I think mine is limited to an 11" x 14" bag. So if you to do a leg of lamb or a big roast, even racks of ribs it's not gonna happen with one of these. I wanted it to save stews, stocks and for sous vide. I end up throwing so much out cause I freeze or refrigerate stuff and don't get to finishing it.
