Mop or No Mop
Doing a single brisket and worried about it drying out. Rubbed it with mustard and Elder's Brisket Rub. Should I mop it and if so with what? [p]Also, cook to 190 internal or less given the size?[p]Thanks

I don't mop mine...I pull at 185 for slicing.
