So I planned on making a prime rib but...

wife thought she would save us some money on the meat and came home with eye of round roast. :-? No prime rib for me, maybe next weekend. Is there a way to cook this thing so it can be eaten and possibly enjoyed? I'm open to ideas.

It's a very lean cut. Seasoned and cooked to about 125 IT, let rest and sliced very thin and it can be good,

Agree on the Pit Beef, Italian Beef, or Beef on Weck style sandwiches. I hope you have a slicer or electric knife.

Definitely NOT low and slow (and I speak from experience). Just not enough fat. Agree about the cook rare and shave thin for best results.Mt Elgin Ontario - just a Large.

well, decided I'm going to do a high temp cook. found a recipe that says go 500 for 7min/lb then turn oven(egg) off and let get to IT of 140(I'm not going to let it get that high). Has alot of good reviews. Threw in some taters and veggies, we'll see if this cheap hunk of meat is edible when I'm done.In Manchester, TNVol For Life!

By the way, wife said she did see a USDA Prime Standing Rib Roast, 9lbs for $122 at Sam's. Does that seem like a decent price?In Manchester, TNVol For Life!

Pulled it off at 223 by my Maverick thermometer but when I measured with my Thermapen it read 255. Fail, but still edible. Wife though the taters and carrots were too smokey but I liked 'em, didn't add any wood except the lump. Definitely not my favorite meal ever but it was filling
Prime rib for reals next week...
