What wood should I use to smoke?

I am going to be smoking a brisket and pork but in the next few weeks. In the past I have used Hickory chunks with Apple chips to do this (with great success) but I am looking to try something different. I have purchased some Hickory and peach chunks and maple, cherry, and pecan chips. Does anybody have a good combination they would recommend? I was thinking about the peach and cherry combo but not sure.

I like your original combination. Keep with the hickory and add cherry with it next time!

I'm going to agree with Egret for beef. If you were doing pork I'd do maple. But I'd say you could try mixing and matching which ever you want to experiment with except for the Hickory and the pecan. I wouldn't cross those two but perhaps others will disagree.I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

For the brisket, I always go with oak... For the pork, I'm going with peach and and some cherry on the next one

I like Hickory and Pecan for brisket and Peach and Cherry for pork butts.

Red oak is my go-to.But any good smoke will doya.Have fun!Chris

I mix cherry with all woods to get that color in the cook.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

I use oak for beef and use a combination of peach and oak for pork with peach or apple for chicken. Half the fun is mixing and matching to find what you like.XL BGE

for the brisket I go with oak as for the Pork I go with Apple & Cherry mix everybody seems to love the Apple & Cherry mix on all of the Pork that I'v cooked2 Large Eggs and a Mini 2 Pit Bulls and a Pork shoulder or butt nearby and 100% SICILIANLong Island N.Y.

I like to use treated pine when I'm smoking in my galvanized garbage can smoker.

An old adage on another forum I frequent goes like this " any wood is fine for smoking, as long as its cherry."Peach is one of my favorites, next is cherry and pecan. Oak is good for brisket though.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX.
