Was about an hour late but was well worth the wait. Brined it for 24 hours then let it sit for 24 hours to dry. I burned up all the lump with only about 10 degrees away from being ready. My house so I made everyone wait and no one complained. I have been given the honors of making the Turkey every year from here on out. One thing I would do is wrap the wing tips from the start.
