I marinated the meat overnight in the citrus mixture, then injected it with some of the strained marinade. Feels weird to do pork without a rub, but i am following the recipe. It has been on for about 2 hours at 350 as of this pic, IT is up to 154 right now. Planning to FTC at 200 and serve later this eve with some black beans and rice. This 4 lb piece of meat is lost on the XL. A mini or small is on my wish list.
Cooking in the DO on the side is some sage sausage which will be going into the stuffing for tomorrow.
