As of late we have been able to get prime packers from Costco. For $2.69 per pound they are a great deal. I put this brisket on @ 7:00 am @ 280 dome. After trimming I'm guessing around 8 pounds.  The flat was done about 5 pm, the burnt ends around 7.  Best brisket to date, the burnt ends were amazing. Smoked with oak from a knob Creek whiskey barrel and rockwood lump.
