Wife was getting the freezer ready for next week. She came across leftover pulled pork from a
few weeks ago. What to do?? It was Mexican night, so she made a pot of
mole sauce and combined the mole with the pulled pork. I couldn’t believe the taste! That is the best leftover pulled pork I have
ever had!
This with beans and rice made for a great Mexican leftover night. Will definitely need to keep this on the front burner!

That sounds really good! I did some carnitas as leftovers and it was also darn good. I loosely followed this recipe:I mixed up the spices/juices and reheated the pulled pork on the stove, then put the pork in a pan with hot vegetable oil per the instructions and served in tortilla with fixins. It was darn tasty. Frying the pork gives it an almost bacon-like exterior .Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
