Tri tip roast

We were at a street fair last night, and bought a tri tip steak sandwich. It was awesome, I watched the guy for a little bit, he was a very busy fella, with all the goings on at the time. He was using a big grill on wheels, he had big pieces of firewood for fuel. Every once in a while he would use a squirt bottle, and squirt the roasts with this concoction. Trying to figure out what it was, it didn't flare up when he hit the meat with it. Wondering if it was something like water with spices, not really sure, don't think it was any kind of oil either. Funny thing was further down the road there was another grill doing burgers and brats and it looked like he was doing the same thing, and like a dummy I didn't ask. Any ideas from you people. It was very tasty
