Peach wood for Turkey?

Hello All,
  Frequent reader, infrequent poster.  I'm doing a #16-18 pound natural free range turkey for my family (and extended) for Thanksgiving.  I've always brined it, but this year I'm thinking of the following.  Any thoughts or amendments?

- Brine in Oakridge BBQ brine.
- Inject with melted butter/garlic powder/onion powder
- Cover in Oakridge BBQ Secret Weapon Poultry/Pork rub.
- Cook indirect with 2 peach wood chunks at 350 for 3-4 hours.

Any thoughts?  I've never used peach wood, but just got some and I'd like to try it out.  I also have some apple and pecan on hand if peach wouldn't be good.

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

    Peach is my favorite as well. You can go with more than 2 chunks its very mild smoke and sweet. If you have never spatchcocked a turkey you have to try it. I boil my potatoes for 15 minutes then put them in a big roaster pan with onions, parsnips, and mushrooms and chicken broth then put a v rack in the pan with the turkey on top so the drippings fall into the potatoes. Don't cook by time cook to temp. Drain the liquid in the pan for gravy and use the potatoes, onions, and mushrooms, parsnips, and onions for mashed potatoes. Smoked mashed potatoes are amazing.
  • All sounds fabulous!  I am going to be doing some chicken wings later this week.  I will try this turkey recipe.  Look forward to your results and maybe some pics.

    I would use maple.  I've tried them all and maple is amazing.

    One final followup- -I'm planning on brining over night tuesday through wednesday afternoon/early evening.  Can I (should I) inject it Wed night with the butter/spice mixture and rub it- -or should I wait and do that Thanksgiving morning?  Thanks

    If you are brining I wouldn't inject at all.
