Pork Chops and Pork Loin (Mickey Insperation)

After seeing Mickey's post on the best thick pork chops, I had to do my first ever brine. I loved it! I did 4 pork chops and 1/3 of a pork loin cut into steaks. Add some mashed taters and corn and I'm fat and happy :D

Here's the pork after the brine using 1/2 cup sea salt, 1/4 cup dark brown sugar and 2 cups water. Patted dry and dusted with Dizzy's Red Eye. Pulled each one off when they hit 140°. A few mashed taters/ corn and plated (I need to get some lessons from VI on how to plate).

    Living in the frigid north, we get maybe 6 months to enjoy an outside cooking area. I would love to make something more permanent but the cost vs time enjoying it doesn't add up for me.

    Whoa!  That is almost exactly what I want!  I want a sink in a table instead of a permanent island.  Already have a water line on my patio. Planning  on a bucket under the drain (need it mainly for hand washing).  Was looking for a steel table with sink but haven't  been able to find one yet. 

    Do the bins stay water tight and keep the contents dry? 

    That's  a beautiful spot you have there.
