    The very best rice I have ever had was on a small island in Belize. Our fishing guide climbed a coconut tree and got some fresh coconuts. He used the coconut water instead of water in the rice. he cooked over an open fire pit with no lid. I despise coconut but this rice was outstanding.

    Or maybe I was just starving after a day of fishing.
