Lobster Tails

Publix has spiny lobster tails on sale this week so I am going to try some tonight, with a steak, of course.  I am planning to slit the back of the shell and cook them shell side up direct leaving the membrane in tact on the bottom - maybe at 400?  What do y'all think?  Any other methods?  They will be thawed and ready to go by the time they hit the egg.

  • This is just me but when I go ahead and cook surf and turf I tend to cook my steaks on the BGE and have my tails in my oven at 350*.  I just like the taste better and is easier to cook to the 140 internal temp.  Lobster is that meat anything under or over will result in a chewy or rubbery lobster.  Cooking my steaks for about 8 min and lobster is usually done in 10 leaving time to mix the salad and let steaks rest before my favorite meal.  Always enjoy with a nice Lager :)
