Slow cooked lamb shank (pics)

The first time I tried this on my XL with a cast iron Dutch Oven. It was smoky, tender and delicious! I seared the shanks direct before softening the onion, carrots and celery etc. with EVOO in the DO over the plate setter. Wine and broth followed. I added the shanks and braised them for 2.5 hours. Puréed the veggies and plated with mash and broccollini.
