Tonights cook - Jambalaya - kind of OT
Tonight was a busy night, with a time frame that did not allow for firing up the XL, so I guess this is OT. I did however use chicken and broth left over from last weeks "sledgehammer chicken" post, and I did cook on the Egg table using my new Eggcessory burner and the CI skillet that I have used on the egg.............. I like the gas burner for saute cooks - I can let it splatter and not have to clean up the stove.
Nothing fancy, diced peppers including the last Poblano pepper from the garden (we have not had frost yet), some onion and garlic, diced tomatoes, Andouille, chicken, chicken broth and some Cajun seasoning. Saute the aromatics, add the rest of the goodies and simmer for about 25 minutes. Dinner tonight and lunch tomorrow. Yum
