First pork butt on BGE

Did my first cook on my XL this past weekend. 7# pork butt along with some skillet cornbread while the butt was resting.
12 hrs. low and slow at 240. Wrapped at 9 hrs. with some apple juice.

Love the cook, especially the corn bread. Here is my favorite easy skillet corn bread recipe. Its great done on the egg. I also like to throw in a handful of chopped jalapenos.1 box of Jiffy (1 and 1/2 cups)1 cup of yellow cake mix2 eggs1 cup of whole milk3-4 TBS of margarine blended into mix1-2 TBS of canola oil in skilletBake at 400 deg for 15 minutes.-Jody Newell (LBGE & a 36" Blackstone griddle).

Boo-yah....that looks awesome, and I am loving that cornbread in the CI Skillet. Speaking of CI, I picked up a large CI skillet at a garage sale this weekend for $2.00!! I am thinking Skillet Cornbread this weekend!

That looks about perfect. Very nicely done. Definitely switch to chunks for better smoke flavor. Makes a huge difference.Southern California
