  • For steaks and small cuts, I'm a believer in knowing your meat by touching it. If you're looking for some cool kitchen swag, get a thermocouple with a 1/16" or 1/32" sensor. The smaller in diameter the faster it reacts and both of these are nearly instant. They also read off the very tip so you can see exactly what is going on.
