Killer Shrimp & Grits!!! (with pictures)

Aight... So, after combing this forum, I believe I found the perfect grits recipe posted by The Cen-Tex Smoker. Here is his recipe:

Jalapeno Garlic Cheese Grits
Ingredients:
3 Cups Water
3/4 Cups Quick Grits
16 oz Mild Mexican Velveeta
3 Cloves Garlic, Minced
2 Eggs
Cayenne To Taste
1 Cup Shredded Sharp Cheddar

Directions:
Preheat oven to 350 degrees Bring water to boil, add grits & reduce heat to medium low Cover and cook 5 - 7 minutes, stirring occasionally Add next 3 ingredients and stir over low heat until cheese melts Remove from heat and let cool slightly Add beaten eggs to grits and stir until well combined Pour into 9 x 13 inch casserole and top with cheddar Bake 30 - 40 min until golden and bubbly

Based on his other suggestion in the original post, I substituted one can of diced green chilli peppers and regular Velveeta cheese in place of the Mexican Velveeta.

For the Shrimp, I attempted to blacken on the Small BGE in an iron skillet using only butter and blackening seasoning. See below for pics:

Blurry final pic... I was so excited to eat them that I rushed the pic and didn't look at it first!

They may not look very good in the final picture, but they were the best shrimp and grits I have ever ate!

Really enjoying this forum! Thanks to everyone who helps to make it so great!
