Hi guys:
Afriend of mine just came back from alalbama with a case of "Dales" seasoning as a present for me. I never heard about it?
Could someone please tell me how to use it!

I cooked NY strips at the just past Waldorf Eggfest ,I used it there with rave reviews...I sprayed it on the steaks, like a mister, with a little garlic salt and onion powder and a good dusting of Dizzy Pig cowlick.....when using the Dales sauce use it very sparingly, I describe it as concentrated soy sauce and it is very strong...you want to shake the bottle well before using it...we hardly cook a steak without it anymore....HTH[p]Wess

WessB,[p]This is my version of Dale's Seasoning, but in my opinion, much better and cheaper (especially if you make it in the big Kikkoman bottle from Costco or Sams). It's great on wings, chicken, pork, & fish. [p]Ingredients:
• 1 pt Soy Sauce
• 1 Tbs Garlic Powder
• 1 Tbs McCormicks Ground Chipotle
• 1 tsp Onion Powder
• ¼ tsp Chinese 5 Spice [p]
Preparation Directions:
• Take the bottle of Soy Sauce and pour a bit of it out to make room for the spices. Using a funnel, pour all the dry spices into the bottle, then add the Soy Sauce back to fill it up. Put the cap back on and shake well. The seasoning works best if this is done the day before the cook. Always remember to shake well before using.[p]Cheers,[p]GM

I know one bbq team that marinates their chicken in Dales and olive oil over night and do very well with it.
Dale's has a website with a few reciepes but not a lot.

I was practically raised on the stuff - one of the few Dales Restaurants was (and still is) in my hometown of Florence, AL (another steak rest in B'ham I believe, and for years a really good cajun place in Atlanta... Joe Dales...) - anyway, as others have noted, it's a very strong flavor...
try forming some burgers and dripping a little on each side to marinate 1/2 hour or a bit more before cooking. Also good mixed into meatloaf.
Some people love it on steaks, but I've also heard some that hate it - start by marinating LESS than you normally would...
It's also good with chicken, again don't overmarinate - wings you could leave overnight, maybe even thighs, but try thighs or breasts for maybe just an hour or so to start..[p]Let us know what you think![p]- Andy

I have used Dale's for years. It is great on steaks, pork chops, chicken, and in hamburgers. My bet is you will love it!

I used it for the marinade for jerky once and it worked just fine. I just added some ground red pepper flakes to move it to the hot side and marinated the beef slices overnight. Set up indirect at 170* for a jerky cook and in about 6 hours had some very good jerky. To me - I cheated by using the Dales 'cause I usually make my own marinade using soy and other spices & liquids. Joe

Dale's is quite tasty, but a little salty. Many of my friends have started using a similar marinade by Moore's. Hint: Remove the blue plastic liner in the cap and use a knife or other sharp instrument to "punch" a hole in the cap. Screw it back on the bottle and use like a shaker.
