Wings, clams casino, beef ribs and a lobster roll

Pics from Saturday and Sunday cooks. Did wings and clams as apps last night, burgers after that. ( Couldn't eat one!) Today I did some beef ribs with Asian BBQ. Lobster roll wasn't egged but was really good.image

    Casino butter
    1/2 pound unsalted butter, softened
    3 tablespoons fresh lemon juice
    2 tablespoons fine chopped red bell pepper
    2 tablespoons fine chopped red bell pepper
    Salt and ground black pepper to taste
    (you'll likely have leftover butter. Can be used on grilled fish)

    Mix butter with lemon juice, chopped ingredients, S & P and roll into a log using parchment paper. Be sure the paper is on the outside of the roll, only.
    Hold butter in fridge overnight or freezer for a few hours.

    Shuck clams.
    Lay out on baking sheet.
    Lightly sprinkle clams with Italian bread crumbs
    Place a thin "coin" of butter on clam
    Place 1 1"x1" slice of bacon on top of butter

    Bake on sheet in the Egg, indirect at ~350 until bacon is crisp. This took about half an hour for me.

    It all looks great.  Beef ribs and lobster roll...that's my kind of surf and turf!


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    Ingredients:

    12 Clams, Littleneck

    1 stick Butter, small stick

    1/8 Bell pepper, Chopped fine

    Pimento, Chopped fine

    Parmesan cheese, Shredded

    Splash Wine, dry white

    Panko bread crumbs, Enough to bind

    12 slices Bacon or Pencetta

    Directions:

    1. Melt butter and mix all ingredients except clams and bacon

    2. Steam clams until opened.  Separate shells and throw one away

    3. Place mixture on top of clams

    4. Put  bacon on top of mixture

    5. Broil

    Great recipe, experimented with it yesterday. Using a large green egg for indirect heat adds such a nice touch of smoky flavor.

    Great recipe, experimented with it yesterday. Using a large green egg for indirect heat adds such a nice touch of smoky flavor.

    You might consider doing a clean burn with your platesetter.
