Second stall at 195?
Put 13 lb. brisket on last night at 1AM. Hit stall at 160 and stayed there for about 3.5 hours. It's now at 195 but not buttery tender so going to take it to 200-205 and check it in between. But, it's been stalled at 195 for about an hour now. Is that normal? Thanks for any help!!

Butts and briskets can both have two stalls. Are you probing in different sections?Extra Large, Large, and Mini. Tucker, GA

Yes. Probed all over. Some a little lower, some a little higher, but average 195. It's climbing out now.

My 12lb has been on since 8 last night. I was at 190 at 7 this morning and currently at 199. Creeping up nice and slow

Put an 8 pounder on last night at 11:15, with the Guru set at 230 my internal temp is (at 10:30am) 170. I probably have another 4 to 5 hours I think.
