Grilled Corn

We had 3 ears of already shucked corn in the fridge Friday so I rubbed a little EVOO and S&P on it and grilled it on the egg. Once it was done, I cut the corn from the cob and added it to a mix of mayonnaise and sour cream with chipotle pepper powder. It made a delicious creamy corn "salsa" that we used on some fish tacos that night. 

There was still some leftover yesterday so I added some boiled potatoes, a little more mayo and a squirt of yellow mustard and we enjoyed some of the best potato salad we've ever had. The roasted corn gave it a wonderful flavor!

Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.
