plate setter

I just bought a XL. The man at the store said the plate setter will season with time like a cast iron skillet. I cooked a 21 pd fresh ham yesterday with no drip pan for 17 hours. The plate setter got a lot of juice on it and smells pretty bad. How do you recommend I clean the plate setter? Should I always use a drip pan from now on?
