OK, what is reverse sear and how does it work?

Indirect at 280° until the IT of the meat reaches around 115°. Remove the steaks and heat the egg to 700°. Finish the steaks off direct to desired temp. I've personally never tried it (as discussed on your previous post), but it's on my list.
