OT: Sous Vide kickstarter
Got an email from Seriou Eats blog. Really interesting write up on a sous vide circulator...

This could be the one kickstarter campaign I finally try out... If it works, that'd be amazing.
For those unfamiliar, J Kenji Lopez-Alt used to be with Cooks Illustrated and first developed (or at least published) the reverse sear method for steaks. He's a darn good/knowledgeable resource...
For the record, I'm not associated with these folks...and cannot speak to the product myself. Just passing info along...

I recommend you buy this instead.. Scientific quality and can heat much larger volumes of water.- I bought one just like it and am very pleased with it.

I paid $250 for a "good condition" ColePalmer unit 8 months ago & it works perfect. Unfortunately, I don't see any good prices/deals for working models on ebay today. I must have been lucky. I like mine as I hook it onto a large cooler & just drain the water out bottom after I'm done. If your going to buy any sous vide, I recommend one you can hook it to something larger than a pot.. Think of size you'll need for 6 steaks in vacuum bags, etc. That was the big reason why I graduated from a crock pot DIY unit, it just wasn't big enough. I would not recommend spending more than $250 for any type of sous vide machine. It's a neat toy, but you could get another egg at that price! Also - I'm always appreciative of posts on others successfull sous vide cooks & recipies. I'm gearing up for beef short ribs 72 hours!
