Flat Iron Steak Cook With Pic

Very proud of how these turned out. Rubbed with Dizzy Dust; then Used the T Rex Method with a couple mesquite chunks thrown in after the sear. Tasted incredible!

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

    Thanks very much!  The pic probably conveys a touch more red than there actually was; still, it was definitely on the rare side, which is how I prefer it.  Made another for my wife that was cooked through a bit more--her preference--but it didn't look anywhere near as pretty, so I didn't post it.

    The greens on the side are sauteed kale and onions.  Honestly, it's gotta be the easiest, simplest dish in the world to make, and it's incredible.  It's one of my go-to sides.  I just chop up an onion and throw it in a cast iron skillet with a generous helping of oil (typically use avocado or macadamia nut).  Cook it on medium-high until onions are translucent.  Throw in a huge helping of greens, usually either kale or chard, and throw some more oil on top of them.  Let it all go on medium-high for a little while.  Err on the side of higher heat rather than lower heat; you want the kale to crisp up a little bit.  Once it's turned into an incorporated mush with some crisped kale in it, you are good to go.  Also worth mentioning I usually season them.  You can just do salt and pepper, but I'll do things like a John Henry or Dizzy Pig rub too.  It's ridiculously easy and it's pretty phenomenal.  As a bonus, it's also pretty great for you.

    Also made sweet potatoes with the meal, but didn't take a pic.  Those were awesome too!
