Clay's Pulled Beef BBQ

I have seen several people commenting on how good Clay's Pulled Beef BBQ is. The recipe looks pretty strait forward, except I was wondering how much beef people do with it. The recipe says that it takes 3 chuck roasts, but how big should each of those roasts be. Hopefully on Saturday night I will be eating some good pork.

Doug, I recently posted a series of pictures about my cook following Clay's recipe so there's a chance you may have remembered that. I used two chuck roasts that totalled 7 pounds. This pix is of the pulled results going back on for the final stage. One last question...your last line referred to pulled pork - did you mean pulled beef "by Saturday" instead?

if you have a good butcher, he can cut you a nice piece from the chuck roll, as big as you need. my butcher stocks rolls about 20 plus pounds and i make the pulled beef from about an 8 pound center piece

Three if they are on the smaller side, two if on the larger side to fit in a No.12 Lodge Dutch oven. The recipe is flexible and forgiving-- buy as much chuck roast as your Dutch oven can hold, add as much, or as little sauce as you like. It's simple to adjust remaining ingredients accordingly.[p]There is shrinkage of weight after cooking and removing fat but there is some gain with sauce. I never figured out how may people this recipe can feed. Sorry. I'll take a guess,.....one big sandwich X 10.
