Low and Slow in the Mini

Hi:[p]Last weekend I used my mini Egg to smoke a sirloin steak at a nice low temp. I prepared the steak with Famous Daves Steak Rub and used cherry wood chips for smoking. I cooked it direct on the mini for about an hour and a half at 225 degrees. I flipped the steak every 20-30 minutes to keep the bottom from cooking too much. While it's a bit unusual to not cook a steak at high heat it was a very tasty steak. I had the bottom vent almost closed with the ceramic top tilted over the dome in a traditional fashion. I was surprised at how nice the mini kept a steady temperature. While the mini does react faster to air flow, it does a pretty good job for the shorter low temp cooking events.[p]Larry
