Lamb Pops

Strip steak for the Mrs. Lamb Pops for me any my son.  The lamb was delicious, and very lean.  Only cooked direct at 450 for about 90 seconds a side for a perfect char outside, rare/med rare inside.  Served with roasted Rosemary Red Potatoes, and fresh corn on the cob from the local farm market.  
It's not a science, it's an art. And it's flawed.
