Beetroot juice marinade for pork shoulders

This is a lovely marinade, for slow barbecuing bigger pieces of pork shoulder (in the Mini!).

For 2 pounds of pork shoulder:

  • beetroot juice
  •  juice of 1 lemon
  • 2 tbs. brown sugar
  •  2 tbs. soy sauce
  • 4 bay leaves
  • 10 pieces of allspice

Cover with the beetroot juice for 24 hours. Than season, sear on the cast iron, wrap into tin foil, and cook it on 260 for 2-3 hours.
