First pork shoulders
8 1/2 hours at about 250, removed at 195 IT. Bone slid out of one easily, not so easily on other. Next time, cook to 200 IT.
Rub (Raichlen, Memphis Rib Rub), refrigerated overnight, indirect, no looking. IN THE RAIN.

Yummy. I pulled the larger one and cut the other into cubes for jambalaya (awesome).
