Beef jerky results, crab cakes, and bacon stuffed bacon

I was anxious to try smoking beef jerky on the egg and really wanted to fit it in this weekend even though we have many other plans for the egg yesterday and today. Typically I would slice and marinate the beef overnight but didn't prep well enough so did a short marinade in soy sauce, dried in paper towels and rubbed in fresh ground pepper.
Since I'm waiting for my jerky hanger to arrive

I hung the strips over the grate and stacked up some cooling racks I use for baking.
Fire went out after a few hours, setting me back. The top sides were cooking but the underside wasn't getting done, probably because there wasn't enough airflow due to the pieces being folded over. i had to rearrange pieces. This problem should go away with the new hanging device on the way. After about 4 hours, I had to get the jalapeño poppers on the egg so was planning to keep the jerky warm in the oven. By the time the poppers were done and dinner of crab cakes and squash were done, most of the jerky was done.
Turned our pretty good but next time, I'd try to marinate longer and plan enough time to finish in the egg. Luckily they got some nice smoke taste from the first few hours on the egg!
Here are some Picts of the poppers (pancetta and cream cheese stuffed) and crab cakes too

Looks great @Jamieoro, I've gotta try doing jerky on the egg. The crab cakes and stuffed peppers look awesome!!
I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season. -

@hapster the bacon wrapped jalapeño poppers have pancetta (Italian bacon) inside the cream cheese mixture

Try just laying the meat on the grid for jerky. Works great. You dont need to hang it. I cook mine at 190 indirect for about 5 hours. One of my favorites.XL,L,SWinston-Salem, NC

@high54putty I would have laid it right in the grate but probably would have only been able to cook an 8th of the amount I did hanging.... Pros and cons...

I hear you. I use my new grid extender thing to do 2 levels at once. What cut of beef do you use?Jamieoro said:@high54putty I would have laid it right in the grate but probably would have only been able to cook an 8th of the amount I did hanging.... Pros and cons...

Love it. Also curious as to what kind of meat you use. Have you ever done turkey? ;;)Every day is a bonus day and every meal is a banquet in Winter Springs, Fl !

@high54putty and @grannyx4 I used top round. Have used flank steak in the past but was looking for a less expensive cut and I'd definitely use it again

I have used cube steak the last few times and I think it may be my favorite. Cheap too.XL,L,SWinston-Salem, NC

Bacon stuffed bacon? Love it - sounds very Homer Simpson-ish

Looking to do jerky this weekend - thanks for the post!

For jerky, flat works great if you have enough levels. This is how I do it...I believe I paid like $4.00 a piece for these at the local big box store a number of years ago.Packerland, Wisconsin
