Watching Diner, Drive-Ins, and Dives. What the heck; baby back ribs simmered for two hours and then coated in sauce. Yuk.
XXL #82 out of the first 100, XLGE X 2, LBGE (gave this one to daughter 1.0) , MBGE (now in the hands of iloveagoodyoke daughter 2.0) and lots of toys

My sister boils her ribs and everytime I facepalm and say no thanks I'm not hungry because they are always tough and rubbery. I tried to teach her low and slow but she is hard headed.XL Big Green Egg

Braised ribs in a flavorful liquid until tender and then sauced and finished under a broiler are quite good. I used to do this all the time pre-BGE and they were fantastic. My definition for fantastic has changed now that I've made them in the egg.

Without ANY drama I did an indirect rib cook yesterday. Dome temp went above 300 ONCE while usually closer to 280, and indirect, at that.
Maybe 4 1/2 hours on the grill in a standing rib rack holding onlly 4 slabs.
Fall-off-the-bone tender without being boiled/mushy.
