Grilled Salmon with Citrus Salsa Verde

So I was perusing salmon recipes and thought 'I bet that would be good on the egg'

I made the salsa and set aside.  I was intrigued by the amber agave nectar.  Wasn't sure what it was so I figured I'd get some and see.  Its just a sweet dark syrup concoction.  I figured Ok, I'll try this stuff.  So after I rinsed some KING Salmon and patted it dry with paper towels I brushed this stuff on both sides.  That recipe called for salt and pepper.  Uhhhh, no.  I don't put any Salmon on the grill without Raging River.  Added it liberally.

I stabilized the Egg between 300-350.  I like to shoot for a range.  That way I don't feel bad if its not exact!  Then I put it on a raised grid direct for 30 minutes.  Did that cause its pretty thick.  If it were thinner I'd put a drip pan below the raised grid and shoot for a stable temp around 300.  But it went on and stablized itself around 325.  Perfect.

So after 30 minutes it looked like this when opened.  Then plated with corn and broccolette.  Saw the broccolette at Costco and figured I'd give it a shot.  We didn't really care too much for that one.  Regular old broccoli next time.....

    Thanks! My understanding is BGE played around with different colors in the late 90's. They ran off about 200 or so blue eggs. It's a large.

    Looks like a nice healthy plate. Did that Tel-Tru come stock with your nifty blue egg? A collector's item for sure.

    No. I bought the tel tru. That was one of my first group buys I believe on this forum a long time ago. Followed by a group buy thermapen!

    Dinner looks great!  That is pretty cool about the blue egg. 

    You can also use that Agave to make a great margarita and other cocktails ;)
